With all the talk of stress in this issue, we thought we’d throw in a simple no-stress dinner and dessert recipe from the 4 Ingredients cookbook.


No-stress Creamy Chicken and sun dried tomatoes (Serves 4)

  • 4 rashers rindless bacon, chopped
  • 4 chicken fillets, sliced lengthways into tenderloins
  • ½ cup semi sun dried tomatoes, finely chopped
  • 250ml Philadelphia Cream for Cooking (a new line in the supermarket)

Heat a non-stick frying pan and add bacon. Cook over a moderate heat for about 4-5 minutes, stirring occasionally or until nice and crisp. Remove to an absorbent piece of paper. In the same pan, brown the chicken strips for 4 minutes, turning once to cook evenly. Add back bacon, with semi-dried tomatoes, season with sea salt and pepper and mix well. Add Philadelphia Cream for Cooking, stir until dissolved, reduce heat and simmer together for 5 minutes. Optional: serve with rice.

No-stress apple crumble

  • 2 400g cans of pie apples
  • ¼ cup sultanas
  • 220g pack of Scotch finger biscuits, crushed
  • ½ cup (115g) melted butter

Preheat oven to 180 deg. Combine apple and sultanas and spoon into baking dish. Mix biscuits with butter and sprinkle over apple mixture. Bake for 15 minutes or until golden. Serve with cream or custard.
